Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh as well as a couple of recipes including those products that you can try at home. 

Here’s what we’ve got for you this week: Apples, meyer lemons, sweet potatoes, various pumpkins and gourds like tan cheese pumpkins, sunchokes, garlic, lettuces, ginger, carrots, rutabaga, turnips, radishes, arugula, kale, collards, savoy cabbage, napa cabbage, green cabbage, radicchio, microgreens, gourmet mushrooms like oyster and lion’s mane, herbs, breads, jams, pastries, GF treats, eggs, beef, pork, chicken, duck, shrimp, smoked trout and salmon, pecans, honey, teas, apple cider, cocktail mixers, ghee, cooking oils, vinegars, hot sauce, pastas, spice blends, nut butters, various flower bouquets.

Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating five weekly outdoor farmers markets and seven farm stands at MARTA stations is one of the strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses. See you at the farmers markets!

Vegan Squash Chili Recipe:

Ingredients:

  • 2-3 cups Winter Squash (butternut, cushaw, acorn, something firm and a little sweet works!) peeled and chopped
  • 1 Onion, chopped
  • 5-6 cloves Garlic, minced
  • Mushrooms, any kind, shredded or chopped small
  • Herbs, like cilantro, chives, parsley, etc! For garnish or stirred into your chili
  • Corn
  • Peppers, spicy or sweet, chopped. 
  • 3 can beans (16 oz each) like kidney beans, white beans, black beans. Drained and rinsed.
  • 1 large can diced tomatoes (28 oz)
  • 1 can chili in adobo, 1-2 peppers chopped (it’s spicy, so use your discretion!)
  • Spices: cumin, chili powder, smoked paprika, cinnamon, onion powder, garlic powder, MSG, sugar, cayenne, salt and pepper
  • 1/4 cup coconut oil
  • 1-2 limes for juice
  • 1 cup TVP, soaked in 1 1/2 cups broth or seasoned water (optional, but recommended as it mimics ground meat!)

Directions:

  1. Combine all ingredients into your pot over medium heat, adding just enough water or broth to cover. Stir. 
  2. Let it cook through and bubble for about 10-20 minutes, then bring down to a simmer for another 20-30 minutes, or at least until your squash is cooked tender. 
  3. Taste and adjust your spices and seasonings, add more coconut oil and lime if you like, smash some of the beans if you want to make the chili thicker.

Honey Soy Carrots:

Ingredients:

  • Ghost pepper honey
  • Carrots 
  • Soy sauce or tamari
  • Salt and cracked white pepper (or black)
  • Oil
  • Butter

Directions:

  1. Cut off the carrot greens and save for a pesto or vege stock for another time, then thoroughly wash and pick off the hairy parts of the carrots. Alternatively, you can just peel them. 
  2. Toss whole carrots in a little salt and pepper and oil, then roast carrots in a preheated oven of 400 degree F for 20-25 minutes or until the outside is tender but the inside is still resistant when sticking a fork or knife in. (if a couple carrots are particularly bigger than most, cut in half – you want all of them to be relatively the same thickness so they cook evenly). 
  3. Gently heat up until a gentle boil of 3 TB of butter and 2 TB soy sauce, and 2 TB honey and turn off heat. 
  4. Take carrots out of oven and brush soy honey sauce all around the carrots. Put back into oven and repeat this every couple minutes until the carrots are fork-tender and build a glossy glaze on the carrots.
  5. Drizzle more honey for a finishing touch to get the full benefits of the honey. You can dig out the actual ghost pepper if you dare to spice it up even more. Just use wooden utensil but do not use anything metal as metal reacts to the enzymes of honey, neutralizing the full benefits you get from room temperature honey!
