We might have had fake spring earlier in the month, but soup season is still in full effect. Try out this black bean soup recipe from Natalie Bianca at home.
Natalie Bianca, which is owned by Kitty Dare owner Jamshad “Jaamy” Zarnegar, opened in the Cascade Heights neighborhood in September of 2024. The restaurant offers up a mix of Southern and Mexican dishes, including this black bean soup.

Natalie Bianca Black Bean Soup Recipe:
Ingredients:
- 10 lbs dry black beans
- 3–4 yellow onions, minced
- 3 carrots, minced
- 4 stalks celery, minced
- 10 Roma tomatoes, minced
- 6 tbsp minced garlic
- 3 bay leaves
- ½ cup chili powder
- ½ cup cumin
- ½ cup ground black pepper
- 3 tbsp dried oregano
- 1 tbsp dried basil
- 1 bottle green Tabasco
- 1½ cups cooking sherry
- 1–2 quarts tomato juice
- ½ cup brown sugar
- Salt and pepper to taste
Directions:
- Mince the onions, carrots, celery, and tomatoes in a food processor.
- In a large stock pot, combine the black beans, minced vegetables, garlic, and bay leaves. Cover with water and bring to a boil.
- Let the beans cook for several hours until soft.
- Add the green Tabasco, cooking sherry, tomato juice, brown sugar, salt, and pepper. Stir well.
- Simmer for at least 30 more minutes to allow the flavors to meld.
- Use a potato masher to slightly mash the beans, ensuring they don’t separate from the liquid. Be careful not to over-mash, or the soup will become too thick. Stir frequently and adjust salt as needed.
