Mary Mac’s Tea Room Banana Pudding Recipe (makes 4-6 servings):
Ingredients:
- 6 cups boiled custard (recipe below)
- 1 13.5 oz box of vanilla wafers
- 6 ripe bananas
Boiled Custard:
- 4 cups milk
- 4 eggs
- 1 cup sugar
- 1 teaspoon vanilla or lemon extract
Directions:
Boiled Custard:
- Pour 4 cups of milk into the top of the double boiler (if you don’t have a double boiler, you can create a makeshift one). Let milk get hot and steamy, but do NOT boil.
- Beat 4 eggs in a mixing bowl until they are light and fluffy. Add 1 cup to the egg mixture and beat again.
- Pour one cup of the hot milk into the egg mix and stir well.
- Slowly pour this mixture back into the double boiler with the rest of the milk. Stir constantly until milk barely comes to boil. The consistency should be thick enough to coat a spoon. If not, continue to cook but do not boil.
- Remove from heat. Poor custard into a heatproof glass dish with a cover. Set aside to cool, covered, at room temperature.
- When cooled, stir in 1 teaspoon of vanilla or lemon extract.
- Cover and store in the refrigerator. Custard spoils easily, so eat as soon as possible.
Banana Pudding:
- Alternately layer 1-quart serving dish with one layer of wafers, one layers of bananas (sliced, 1/4-inch thick), and one layer of custard.
- Cover tightly and place in the refrigerator until ready to serve or for at least 1 hour. If desired, top with whipped cream when serving.
