Black Lentil Summer Salad Recipe:

Ingredients:

  • cherry tomatoes
  • collard greens
  • sweet white onion
  • cucumber
  • red and green okra
  • fresh basil or cilantro
  • black beluga lentils
  • tahini
  • sunflower seeds, pepitas, & sesame seeds
  • apple cider vinegar
  • salt, pepper, red chili flake, & cardamom

Directions:

  1. Cook your lentils just until tender, and then drain of water and cool under a cold water rinse from the faucet. You don’t want these to keep cooking, or they’ll turn too soft! Set aside.
  2. Chop your veggies and ribbon your collards. Combine all with lentils.
  3. For the dressing, mix equal parts tahini and water and whisk until a white, creamy spread forms. Now add a little apple cider vinegar at a time until you get a pourable slurry. Season to taste with salt, pepper, chili flake, and cardamom. If you have any lemon juice or zest, add a little now!
  4. Mix into your lentil salad, and top with fresh herbs and seeds. Enjoy!
