Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh, along with a couple of recipes that include those products.

Here’s what you’ll find in the way of produce at the farmers market this week: Bok choy/pak choi, carrots, radishes, turnips, apples, winter squashes, kale, collars, sweet potatoes, mandarins/satsuma oranges, beets, sunchokes, arugula, tomatoes, garlic,  khlorabi, lettuce/mixed greens, microgreens, peppers, gourmet mushrooms (oyster, lion’s mane, shiitake), herbs (parsley, chives, green onions, cilantro, rosemary), and tomatoes.

Look for these specialty items: Pecans, smoked salmon and trout, flowers (marigolds, sunflowers, cosmos, mixed flower bouquets), pastured pork, wild caught shrimp, eggs, goat + sheep cheese, milk, jam, chocolate, honey, oils, tea blends, cold pressed juices, hot sauce, vinegars, nut butters, spice blends, ghee, pickles, pasta, tortillas, apple cider, and bone broth.

Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating weekly outdoor farmers markets as well as rotating farm stands are strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses.

Winter Citrus Salad Recipe:

Ingredients:

  • Mixed chicories
  • Meyer lemons 
  • Satsumas 
  • Delicata squash (& seeds)
  • Fresh ginger 
  • Toasted sesame oil 
  • Nama shoyu 
  • Date syrup
  • Salt & pepper 

Directions:

  1. Begin by roasting your delicata squash until tender. You can roast the seeds separately in a cast iron in the oven, or you can prepare both the squash and the seeds stovetop. Salt and season well – this will give the bowl its savory, salty weight. 
  2. To dress it all up, mix equal parts Meyer lemon juice and satsuma juice into a small bowl (this is your acid – feel free to sub a vinegar of your choice). Whisk in freshly grated ginger, a splash of nama shoyu, a healthy touch of toasted sesame oil, and as much date syrup as you prefer. Because we’re dealing with bitter greens and acidic citrus, don’t be afraid of the sweetness – it’ll help balance things out. 
  3. Toss all ingredients together and top with slices of satsuma and roasted squash seeds. If you’re a sesame fan, you might add some tahini to the dressing for an extra punch and creaminess.
  4. The bitter greens can be cooked or kept raw. If they are raw, the acid from your citrus and the fat from the toasted sesame oil and seeds will help even everything out, especially if you allow the dressed salad to sit for a moment before you enjoy.

Grapefruit Cake Loaf Recipe:

Ingredients:

  • ¾ cup freshly squeezed grapefruit juice (about two fruits) 
  • ¾ cup sunflower oil 
  • 2 cups flour 
  • ¾ cup sugar
  • ¼ cup milk of choice
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking soda
  • ¼ tsp baking powder

For the glaze: 

  • ½ cup powder sugar
  • 2 tsp grapefruit juice
  • 1 tsp raspberry powder (optional, for color)

Directions:

  1. Preheat your oven to 350° F. 
  2. Into a mixing bowl, whisk together your wet ingredients: grapefruit juice, milk, vanilla, and oil. 
  3. Into a separate bowl sift the flour, sugar, baking powder, and baking soda. 
  4. Slowly, using a rubber spatula, combine the wet and dry ingredients into a smooth, fluffy batter. 
  5. Thoroughly grease your loaf pan (or a 8-9 inch round) and pour the batter in. Bake for 60 minutes until the top has taken on a golden-brown color and a toothpick can be inserted and comes out dry. 
  6. Remove the cake from the oven and allow to cool completely to room temperature. 
  7. To make the glaze whisk together the powders and juice until smooth. Once the cake is cool, drizzle the glaze on top and allow to harden. Enjoy!
