Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh, along with a couple of recipes that include those products.
Here’s what you’ll find in the way of produce at the farmers market this week: Bok choy/pak choi, carrots, radishes, turnips, kale, collards, swiss chard, arugula, sweet potatoes, mandarins/satsuma oranges, beets, sunchokes, apples, khlorabi, lettuce / mixed greens, microgreens, gourmet mushrooms (oyster, lion’s mane, shiitake), herbs (parsley, chives, green onions, cilantro, rosemary), ginger, and turmeric.
Look for these specialty items: Pecans, smoked salmon and trout, flowers (marigolds, sunflowers, cosmos, mixed flower bouquets), pastured pork, wild caught shrimp, eggs, goat + sheep cheese, milk, jam, chocolate, honey, oils, tea blends, cold pressed juices, hot sauce, vinegars, nut butters, spice blends, ghee, pickles, pasta, tortillas, apple cider, and bone broth.
Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating weekly outdoor farmers markets as well as rotating farm stands are strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses.

Bacon Cheddar Hash Brown and Cabbage Casserole Recipe:
Ingredients:
- 4 oz bacon, sliced
- 1 tbsp butter
- 1 yellow onion, sliced
- 2 cloves garlic
- 1 green cabbage, cored and thinly sliced
- 2 Idaho potatoes, shredded
- Sea salt to taste
- Freshly cracked black pepper to taste
- 1.5 cups sour cream
- 1 ½ + ½ cups shredded cheddar
Directions:
- Add the sliced bacon and butter to a cold, medium sized pot. Place the pot on the stove and cook on medium heat until the bacon starts to render out and become crispy.
- Next add the sliced onions and garlic, and continue to cook until the onions are translucent and tender, about 5-7 minutes. Cover your pot with a lid at this point.
- Add the sliced cabbage and continue to cook on medium heat, covered, until the cabbage is tender, about 15 minutes.
- Remove the pan from the heat, shred the potatoes right into the pot, season with salt and pepper, and mix in the sour cream and one and a half cups of shredded cheddar. Mix well.
- Cover the top with the extra half cup of cheddar, and bake at 375˚ for 45 minutes, covered.
- Next remove the lid and continue to cook until the top of the casserole is golden brown and delicious, for about another 15 minutes.

Spicy Greens Pasta Recipe:
Ingredients:
- 3-4 bundles of turnip greens (Cut the greens off at the base and wash thoroughly. If you still think your greens are too big, you can cut them down even further, but remember they’ll shrink).
- 8 oz dry pasta (your choice)
- 2-4 cloves of garlic, peeled and minced
- Olive oil
- Nutritional yeast to taste
- Salt & pep, smoked paprika, red pepper flakes to taste
- 1 fresh lemon, sliced and squeezed over final dish to taste
Directions:
- In a soup pot, bring salted water to a boil then drop in pasta. Cook until al dente, usually 8-11 minutes.
- While your pasta cooks, bring a wok drizzled with olive oil to medium-high heat. Add greens and sauté until wilted and more tender, 2-3 minutes, then add your garlic and sauté for 2-3 minutes more. Take off the heat.
- Your pasta should be done at this point. Scoop out a cup-ish of pasta water and then drain your pasta in a colander. Add the pasta to your wok with a heavy drizzle of olive oil, spoonfuls of nutritional yeast, a few heavy cranks of black pepper, a pinch or two of red pepper flake and salt. Add splashes of starchy pasta water as needed.
- Toss all that goodness and green together until well mixed and seasoned to your liking, and then squeeze a few slices of lemon (watch the seeds!) over top, as much juice as you like.
