In honor of the World Cup matches taking place in Atlanta, we’re sharing recipes representing some of the countries playing in the tournament in June and July.
This week, Monday Night Brewing shared a recipe for Czech sausage rolls, which are inspired by two iconic Central European foods: kolaches and Pražská klobása, also known as Prague sausage.
Czech immigrants started bringing kolaches and klobása (aka kielbasa) to the United States in the mid-19th century. Both became incredibly popular in states with Czech enclaves, like Texas and Illinois.
While kolaches are traditionally made with yeast dough, Monday Night Brewing uses the sourdough pizza dough for a gluten-free version. However, these sausage rolls can also be made with store-bought dough, or a homemade dough of choice.
You can try these sausage rolls, as well as Monday Night Brewing’s special Czech Pale Lager, at the Berkeley Park and West End taprooms during the screening of the Czechia vs. South Africa match on June 18.

Makes 1 serving
Ingredients
- 1 hot dog
- Half of a pizza dough ball
- 1 oz garlic aioli
- ½ oz pecorino
Directions:
- Prep the dough: Cut a dough ball in half. Flatten the half dough ball out. Depending on depending on type of dough, you may need to stretch into cheesy bread form: long rectangle, then cut into strips.
- Assemble: Spread garlic aioli on the flattened dough. Top with pecorino. Roll hot dog tightly in dough. Pinch edges so the sausage is fully covered.
- Bake: Place roll on a sheet tray and bake at 425 degrees F until dough is golden brown and a toothpick slides out clean. (You can also use a pizza oven.)
- Let cool. Slice into 5 or 6 pieces and serve with a dipping sauce such as pesto.
