Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh, along with a couple of recipes that include those products.

Here’s what you’ll find in the way of produce at the farmers market this week: Apples, pears, okra, eggplant, peppers (sweet peppers, poblano, shishito), beans, tomatoes, blueberries, muscadine grapes, persimmons, onions, cucumbers, zucchini, squash, melons, pumpkins, butternut squash, candy roaster squash, arugula, beets, bok choy, lettuce/mixed greens,  microgreens, green onions, gourmet mushrooms (oyster, lion’s mane, shiitake), herbs (chives, green onions, cilantro, basil, tulsi), carrots, and sweet potato greens.

Look for these specialty items: Foraged foods, pecans, smoked salmon and trout, flowers, plant starts, pastured pork, wild caught shrimp, eggs, goat + sheep cheese, milk, jam, chocolate, honey, oils, tea blends, cold pressed juices, hot sauce, vinegars, nut butters, spice blends, ghee, pickles, pasta, tortillas, apple cider, and bone broth.

Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating weekly outdoor farmers markets as well as rotating farm stands are strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses.

Apple, Pear + Harvest Salad Recipe:

Ingredients:

  • Green cabbage, thinly sliced 
  • Fresh kale 
  • Spinach
  • Apples, diced or thinly sliced
  • Fresh pear, diced or thinly sliced 
  • Fresh basil, thinly sliced 

Directions:

  1. Start by preparing all your greens – thinly slice the green cabbage, tear or chop the kale, and wash the spinach. Combine them in a large salad bowl.
  2. Dice or thinly slice the apples and fresh pear. Set aside.
  3. Thinly slice the fresh basil and scatter it over the greens for aromatic freshness.
  4. In a small bowl, whisk together the dressing: start with 3 tablespoons fresh lemon juice, 2 tablespoons coconut aminos, 1½ tablespoons agave, and 1–2 tablespoons water.
  5. Add sesame oil as needed (Chef Kira tip: massage the greens with sesame oil first, so you may not need much additional oil in the dressing!). Add a small pinch of salt if needed. Whisk everything together and taste before pouring over your salad – you want bright, slightly sweet, savory, and just enough sesame coming through.
  6. Add about half of your dressing first, toss gently, and taste. Add more if needed, adjusting to your preference.
  7. Serve immediately while the greens are crisp and fresh!

Arugula, Apple + Pecan Tartine Recipe:

Ingredients:

  • 2–3 thick slices rustic sourdough bread
  • 4 cups fresh arugula, roughly torn
  • 1 large crisp apple (I used crimson crisp), diced
  • ⅓ cup pecan halves, lightly toasted 
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 medium shallot, thinly sliced 
  • 1 tsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 2–4 oz whipped feta cheese

Directions:

  1. Toast the sourdough slices until golden brown.
  2. Spread a generous layer of whipped feta on each slice of toasted sourdough.
  3. In a medium bowl, whisk together the olive oil, apple cider vinegar, honey, and Dijon mustard. Season with a pinch of salt and pepper to create a light vinaigrette.
  4. Add the torn arugula to a large mixing bowl. Drizzle with about half of the vinaigrette and toss gently to coat without wilting the greens.
  5. Fold in the sliced apples and toasted pecans. Toss lightly to distribute the fruit and nuts evenly.
  6. Spoon the salad generously onto the prepared sourdough slices, mounding it high for that perfect open-faced presentation. Serve immediately while the bread is still slightly warm and the greens are crisp!
