Pullman Yards is starting a new restaurant residency program called Brick and Mortar (Photo Courtesy Chefs Market).

Pullman Yards is planning to start Brick and Mortar, a restaurant residency program that will be located in the restaurant now known as Dailies & Sides. 

The residency program is an extension of Pullman Yards’ weekly Chefs Market and Bazaar, according to a press release. The program aims to serve as an incubator for burgeoning chefs, and the first residency is expected to begin on Aug. 10. 

According to the release, Brick and Mortar will provide each resident with front-of-house and back-of-house staffing, marketing and promotional support, and a full beverage program overseen by in-house Culinary Director and Salty Smiles Founder Alan Somphonephakdy. 

“We want Brick and Mortar to be a space for chefs and entrepreneurs and their teams to grow, learn, and build a sustainable business model, furthering Chefs Market’s mission to promote cultural awareness through food,” said Adam Rosenfelt, co-owner of Pullman Yards, in the release. “And with Alan’s leadership, we will be able to help local culinary talent run at full capacity, focus primarily on their creative vision and further achieve their dreams.

All previous and current food vendors at Pullman Yards’ markets will automatically be eligible to apply. The restaurants will be evaluated on their popularity among market visitors, their ability to act as a stand-alone concept, and their ability to execute. Residents will open in the restaurant space for up to three months at a time with doors open from Wednesday to Sunday. 

Brick and Mortar will also feature a standard menu for diners. Applications for the residency program can be found online
