CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses. See you at the farmers markets!
Community Farmers Markets is hosting a special tomato celebration at Oakhurst Farmers Market on July 19. Tomato Day will feature themed demos, vendor specials, a tomato salsa contest, live music, and more. You can find more information and RSVP online.

Summer Vegetables and Rice Recipe:
Ingredients:
- bell pepper & sweet lunchbox pepper .
- kohlrabi
- mixed heirloom tomato
- mizuna & mixed mustards
- brown rice
- tahini
- lemon juice
- sweet vinegar / apple cider vinegar
- ground coriander
- turmeric
- kalonji seed
- salt
Directions:
- First, chop your tomatoes roughly and place them in a bowl with cold water and salt. This salts them without losing any of their structure.
- Now, chop your peppers, kohlrabi, and greens finely, and add to a separate bowl with your cooked, cooled rice.
- While the tomatoes brine (all of 15-20 min), whip your tahini with equal parts tahini, cold water, and a splash of lemon juice. It should first form a white, creamy emulsion, and then with the addition of more water, a thick dressing you can pour over your rice salad.
- Remove the tomatoes from the brine and mix all veggies, rice, and tahini mix together. Now season to taste with the rest of the spices listed.
- If you have any fresh herbs, add those as well.

Summer Spring Rolls Recipe:
Ingredients:
- Veggies you can eat raw: sweet corn, yellow squash, okra, zucchini, cucumbers, peppers, etc.
- Rice paper
- Vermicelli
- Bail leaves
- Garlic
- Ginger
- Rice vinegar
- Tamari
- Sesame Oil
Directions:
- Gather all the veggies and chop and mix them all together.
- Next, prepare your rice paper and vermicelli. The rice noodles can be cooked in a little warm water for just a few minutes (or as per instructions on the package), and you’ll just need a pan of cold water for the rice paper.
- Briefly dunk the rice paper in water and set it on your cutting board. Layer a few pretty veggies in the center, then cover these with basil leaves, then a little vermicelli, and then your veggie mix.
- For the sauce, chop up garlic and ginger and cover with 2 parts rice vinegar, 2 parts tamari, and 1 part sesame oil.
