Chef Fuyuhiko Ito opened the last of his three restaurants at the Spring Quarter development in Midtown, taking over a ground-floor space at the Ten Twenty Spring office tower.
Called Sozou, the Japanese restaurant includes a sushi bar and robatayaki dishes cooked over binchotan charcoal on a robata grill.
Look for an assortment of sushi, including sousaku nigiri, along with larger entrees such as a grilled branzino served whole and cooked to order. A dressed avocado salad, a staple on all of Ito’s menus, is also available at Sozou. For dessert, pastry chef Lisa Ito offers a parfait comprising vegan coconut ice cream, guava sauce, pineapple confit, four flower sorbet, and macadamia nut brittle.
Sozou joins two other Ito-backed restaurants at Spring Quarter: Celestia, a rooftop cocktail lounge with sweeping views of Midtown, and ISHIN by Ito, a 16-seat omakase room. Both restaurants are located on the eighth floor of Ten Twenty Spring.
