It’s Dry January no longer, which means it’s the best time of year for a new cocktail. The Woodall has the perfect twist on a gin and cocktail to get you back in the groove.

If you’re a gin and tonic fan, the G&Tea will scratch that itch and more. This cocktail from The Woodall – located along Marietta Boulevard in West Midtown and opened by restaurateur John. C Metz in 2021 – is more than classy enough to impress your friends at your next get together.

Woodall G&Tea Recipe:

Ingredients:

  • 1.5 oz St. George Botanivore Gin
  • .5 oz Chamomile St. Germain
  • .25 oz Chamomile syrup
  • .25 oz Italicus
  • .5 oz lemon juice
  • .5 oz lime juice
  • 2 dashes Scrappy’s Black Lemon Bitters
  • A topper of tonic water
  • Garnish: dehydrated lemon wheel, mist of sage-treuse, holy basil flower

Directions:

  1. Add all ingredients but tonic water to the shaker.
  2. Add ice and shake.
  3. Strain into snifter glass.
  4. Top with tonic water, then add ice.

Chamomile St. Germain Recipe:

Ingredients:

  • 750 ml of yellow chartreuse
  • 5 grams of loose leaf chamomile

Directions:

  1. Sous vide all ingredients for 2 hours at 140.
  2. Chill in ice bath until room temperature or cooler.
  3. Strain through cheese-cloth, squeezing all liquid possible out of tea.
  4. Label with date, time, and discard by date.

Sage-Treus Recipe:

Ingredients:

  • 3 grams of bay leaves
  • 3 grams of lime leaves
  • 4 grams of sage leaves
  • 6 grams of lemon peels
  • 350 grams of yellow chartreuse

Directions:

  1. Sous vide all ingredients for 2 hours at 130.
  2. Strain through Chinois.
  3. Label with date, time, and discard by date.

Chamomile Syrup Recipe:

Ingredients:

  • 5 grams chamomile flowers
  • 1 quart water
  • 1500 grams granulated sugar

Directions:

  1. In a pot, bring water to a boil and then take off heat.
  2. Stir in chamomile and let steep for 10 minutes.
  3. Strain through chinois and cheese cloth.
  4. Add 1000 grams of chamomile tea and sugar to blender.
  5. Blend until sugar is dissolved.
  6. Label with date, time and discard by date.
